Southern Black Eyed Peas

Here in the South it is Tradition to Have Black Eyed Peas on New Years Day. Now I know many people do not care for Black Eyed Peas so it is ironic that the first recipe I post is for them. All I can say is give them a try.

1 lb dried black eyed peas
8 cups of water
6 slices bacon
1 onion, chopped
1 green bell pepper, chopped
1 cup fresh parsley, chopped
1 bunch green onions, chopped
1 small jalapeno pepper, minced and seeded
3 cloves garlic, pressed
1/4 teaspoon hot sauce
2 tablespoons worcestershire sauce
1 1/2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon dried oregano
1 lb smoked sausage, sliced
1 1/2 cups chopped smoked ham (equal to about 1/2 lb)
1 (14 1/2-oz) can cajun style stewed tomatoes, undrained

Wash peas, put in large pot, add water to depth of 2 inches above peas. cover, let stand 8 hours or overnight

Drain peas, return to pot. add 8 cups water; bring to a boil. cover, reduce heat, and simmer for 30 minutes, stirring occasionally

Add bacon and every ingredient except for ham, sausage, and tomatoes. return to a boil, cover, reduce heat, and simmer for 30 minutes (or until peas are tender)

Add sausage, ham, tomatoes. return to boil, cover, reduce heat, simmer for 30 minutes.

Makes about 15 servings.

Southern Breakfast Quiche

1 Pound Breakfast Sausage 1 Cup Milk 1 Cup Bisquick or Equivalent (I prefer Pioneer Brand) 3 Eggs Salt and Pepper to taste Salsa Shredded Cheese (Your Choice) Pie Plate Cooking Spray or Butter
Directions
Preheat oven to 350 Degrees
Cook the sausage in a pan until done and drain.  
While Sausage is cooking use either the Cooking Spray or butter to grease the Pie Plate. Spoon the Salsa into the bottom of the greased pie plate using any amount that you want and whichever type and heat of salsa that suits your fancy.
Once the cause if done drain it and spoon the sausage on top of the salsa and then  cover in cheese.  
Combined the eggs, milk and bisquick and combined all three until the eggs are beaten.  Salt and Pepper the mixture to taste.  Pour the mixture over the sausage and cheese and back at 350 Degrees fro 30 minutes.  If you would like more cheese on top of the mixture add the cheese about 10 minutes before cooking time is completed.
For added flavor you can add any other ingredients that you would like such as jalapeños, mushrooms, bacon or whatever you can come up with.
